Sunday Sauce

In many Italian American households, Sunday means there’s red sauce simmering all day on the stove.

If Sunday sauce had a tagline, maybe it would be, “Why have spaghetti and meatballs if you can have spaghetti and meatballs, sausage and pork shoulder?” Sunday sauce is a classic Italian American dish that has you brown and braise a bunch of different meats in a tomato sauce, and has you simmer that all day long. And then the family comes over that night and eats the sauce with pasta. This recipe uses pork shoulder, Italian sausage and meatballs for various textures. But the sauce is made with various cuts of beef, pork or lamb. What happens is when all of these meats kind of simmer for many hours together, you get this super, super rich meat braise that is also a pasta sauce. It doesn’t take all of Sunday, but it takes a couple hours. So just put it on the back of your burner, go about your day and then have such a good dinner that night.
